Minty with a bit of a bite. A colorful accompaniment for grilled or roasted meat, fish and vegetables…or just a bowl of tortilla chips.
Ingredients
- 1 firm, ripe mango, flesh removed and cut into ¼ inch dice
- 2 tablespoons finely chopped red onion
- Juice and zest of 1 lime
- 2 tablespoon mint leaves, chopped
- 1 tablespoon coriander leaves, chopped
- 1 birds eye chili
- Salt and pepper
Instructions
- Stir the salsa ingredients together in a bowl. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to mellow.
